We valorize under-exploited resources from artisanal production processes: spent grains from breweries, fruit and vegetable pulps, oil cakes and okaras from beer brewing, juice pressing, oils and vegetable beverages, respectively. Our zero-waste objective also leads us to buy back off-calibre fruit and vegetables to supplement the income of market gardeners. We also collect by-products that we dry to preserve their excellent taste and nutritional qualities. These ingredients are wonderful sources of fiber and protein for our cookies. All these untapped resources come from short circuits in the South of France, and are processed by us in our cookie factory in Aix-en-Provence.
