MAGDELEINE, Sourdough Bakery for You

Magdeleine, Des Pains aux levains comme autrefois, is an organic bakery about to open in the city of Pau, close to the city center and just a few minutes' walk from the Bernadotte barracks. It will be located in the former Magdeleine grocery store, 15 Rue de Livron, 64000 Pau (Photo: above). The opening of this bakery is first and foremost the result of a professional reconversion project. A researcher, I decided about a year ago to become a baker, out of passion and a love of good food. To this end, I trained at the Ecole Internationale de la Boulangerie (EIDB), located in the Jabron valley in the Alpes-de-Haute-Provence region, France . The aim is to offer old-fashioned sourdough bread to the people of Pau, in this old place which, in its own way, fed the social fabric of the surrounding area and which, I hope with this project, will satisfy people around and far beyond. Exclusively natural leavened and therefore organic bakery products await you. Last but not least, and as I firmly believe, without any hackneyed clichés, it's a shared adventure that I'm inviting you to take part in and share.
I'll be starting Magdeleine essentially on my own, in both production and sales. I'll have the honor of welcoming you with my smile in the early days of the bakery. Later, I'll be joined by two associates. Magdeleine's first steps will start with me, and of course with my smile. The following months will see the arrival of my partner, who is also committed to this project. We look forward to serving you.

Allocation of funds

The funds raised will be used to reinforce my contribution to the financing of an oven. This is a second-hand Fringand oven with a baking surface of around 7m2 and technology that optimally manages energy consumption. It's the biggest investment I've ever made in equipment, and is essential for the quality of the breads I want you to have. The overall cost of the oven is €20,000, including dismantling, transport to Magdeleine, assembly and electrical connection. In addition, there will be the cost of building an extraction duct to remove the cooking fumes. I would like to raise the sum of 8000€ for this campaign, which will be structured in two stages: The 1st stage will essentially be used to raise the sum of 5000€ so that the oven can be moved to the bakery and then assembled. The 2nd stage will be used to start the electrical connection work to provide the store with adequate electrical power. The total cost of this work is estimated at 3,000 euros. As crowdfunding campaigns are structured on an “all-or-nothing” basis for the applicant, the tiered structure is essential to maximize my chances of receiving your donations.
